PASTA WITH SAUSAGE & VEGGIES

Just a great, EASY, one-pot meal.  

1 box pasta of choice (I used Pow green lentil pasta -- don't judge the pasta for the broken pieces in this photo -- I left it sitting too long and they got stuck together)
1 Tb kosher salt (or more if you like)
3 Tb olive oil
2 packages sausage of choice (I used Niman Ranch Spicy Italian Sausage), sliced into 1/4" thick rounds
8 oz mushrooms, sliced (I bought a package of pre-sliced mushrooms -- any kind you like is fine)
1 bag frozen corn (or 2 1/2 cups of fresh)
2 medium leeks, chopped
1 head broccoli, chopped into florets
1 bunch asparagus, sliced into pieces about 1-2" long
2 Tb butter or ghee
1 tsp lemon zest , plus 2 Tb fresh lemon juice (from 1 lemon)
1/4 cup fresh basil, chopped
1 cup broth (can be store-bought or homemade -- I used homemade bone broth), or reserved pasta water.

Cook pasta in a  large pot of boiling water until almost done.  Drain pasta, reserving 1 cup of the pasta water if desired.

Meanwhile, heat oil in a large pot or Dutch oven (I used a big Le Creuset) over medium-high heat.  Add sausage and mushrooms to pan and cook, stirring often, until they begin to brown, about 7-8 minutes.  Add corn, leeks, broccoli, asparagus and salt and cook, stirring often, until veggies are tender.

Add butter, lemon zest, lemon juice, basil and either the reserved pasta water or broth.  Cook, tossing, until liquid coats pasta, about 3 minutes.  Serve!
