BLACKENED COD BURGERS WITH PICKLE MAYO
My kids are not huge fans of fish. I try and find ways of sneaking fish into their diets, but it is usually met with a lot of scrunched up noses. But these cod burgers? Thumbs-up all around.
1 Tb butter
2 Tb fresh chives, chopped
2 lbs. boneless cod filets, cut into chunks
4 tsp mustard
1 tsp salt
4 tsp blackening seasoning
Olive oil spray
1/4 cup "good" mayonnaise (I love the Primal Kitchen mayo)
2 Tb chopped dill pickle
2 Tb fresh parsley, chopped
1/2 tsp fresh lemon juice
1 lemon, sliced into 6 or 8 slices (ends are fine to use)
Place butter, chives, half of the fish, mustard and salt into a food processor. Pulse until finely chopped. Add remaining fish and pulse to combine. I pretty much puree mine.
Divide mixture into 6 or 8 equal portions and shape into burger patties. Sprinkle patties evenly with blackening seasoning and a touch of olive oil spray.
Whisk together mayonnaise, pickle, parsley, lemon juice and a pinch of salt in a small bowl. Set aside.
Heat a grill to medium-high heat. Place lemon slices on grill. Place a cod burger on top of each lemon slice and cook for 8-10 minutes, flipping them over halfway through (the lemon slices are just to prevent the burgers from sticking to the grill, so they should be left there when the burgers are flipped over). Top with pickle mayo and serve.
