ASIAN PORK LETTUCE WRAPS
3 Tb olive or avocado oil
2 pounds ground pork (preferably pasture-raised like this)
1 bunch scallions, chopped (white, light green AND green parts)
3 garlic cloves, finely chopped
4 carrots, shredded
1/2 cup gluten-free soy sauce, Tamari or coconut aminos
3 Tb creamy peanut butter
1 Tb honey
1/4 tsp hot chili paste
1 Tb cassava flour (or any flour or starch of your choice)
3 Tb sesame oil
Romaine, iceberg or butter lettuce leaves
Heat the oil in a large pan over medium high heat. Add pork and cook, breaking it up into little bits as it’s cooking, adding in the chopped scallions when it’s about halfway done. This takes about 5 minutes. Add garlic, shredded carrots, soy sauce, peanut butter, honey and hot chili paste and stir to combine. Add cassava flour (or whatever starch you’re using) and stir — this will thicken the sauce up. Add sesame oil and stir to combine. Serve in lettuce leaves.
