SCHMITTY'S ROASTED CAULIFLOWER & TOMATOES
1 head of cauliflower, chopped into florets
1 red pepper, sliced into thin strips
1 container of grape tomatoes, sliced in half (the tomatoes, not the container)
1/4 cup of gluten-free breadcrumbs or panko
5-6 Tb olive oil
1/2 Tb red pepper flakes
1/2 Tb salt
4 cloves of garlic, thinly sliced
black pepper to taste
Preheat oven to 400 degrees. Throw cauliflower florets, red pepper strips, tomatoes and garlic slices onto a sheet pan. Sprinkle with breadcrumbs or panko, olive oil, red pepper flakes, salt & pepper and toss to combine. Cook for 15-20 minutes or until cauliflower is slightly browned.
