CARROT SPICE ROUNDS

1 cup grated carrot
3/4 cup chopped walnuts
1/2 cup dates (5-7 Medjool dates)
1 1/2 cups almond flour
2 Tb coconut flour
2 Tb  butter
1 egg
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp nutmeg
3/4 tsp cinnamon

Preheat oven to 350.  Place all ingredients in a food processor to combine (it comes best if you mix the first 3 ingredients together, then add everything else and mix again).   Line a sheet pan with parchment paper.  Roll dough into 1" balls (dough is VERY sticky but workable) and place on the sheet pan, pressing down the ball to flatten it to about 1/2" thick.  Bake for 14 minutes and enjoy!  Great for breakfast-on-the-go or an after-school snack.

I adapted this recipe from one by The Paleo Mom -- it's very similar, but a little less spicy than her version.  If you prefer more spice, she adds in a pinch of cloves and 1/2 teaspoon of allspice (and cuts the cinnamon in half).
